Yesterday we drove around and visited the islands. We had several food items we wanted to purchase, one of which was lobster. However, the fish market was all sold out. Iles de la Madeleine is known as Quebec’s lobster capital, with the greatest amount of lobster caught here each May to mid-July. We naturally couldn’t leave without tasting some of the local seafood. So we settled (if you can call it that) on lobster pieces and I made us a guedille (lobster roll). Here are the steps and ingredients (and don’t forget the wine for the Chef):
- Meat from 1/2 cooked lobster
- Mayonnaise and pepper to taste
- Fresh organic lettuce
- Toasted hot dog buns from the local bakery (not the yucky commercial kind)

Yes, it’s a problem travelling with your own personal chef. The chef is also well fed.
